A FEW WORDS
Pihilosophy was born in Greece. Pythagoras, Solon, Socrates, Plato and Aristotle defined and promoted philosophy as a lifestyle. A lifestyle designed to obtain virtue. According to the above ancient philosophers, virtue is a Divine gift. Friends tend to exchange gifts. Therefore, if man becomes familiarized with God and His wisdom, he will become what Greeks call “philo-sophos” (wisdom lover), and he will accept the gift of virtue. Acquiring virtue was the ultimate aim in life for Ancient Greek philosophers. Plato selected Cretan land aiming at creating his ideal state.Cretan land was also chosen-in his last work-the Laws so as to bring the state of philosophy, the state of virtue, into life. One of his primary legislations was agriculture. All kinds of crops give people life, which is necessary for the existence of philosophy. Life and philosophy are inseparable.
The olive tree doesn’t grow anywhere. There should be appropriate fertile soil, ideal climatic conditions, lots of sun and suitable altitude respectively, In other words, the olive tree only grows where the conditions are divine-Divinus.In Crete, the island where the Minoan Civilization was born, these conditions are found in a perfect combination. Ancient trees, aged 500 years and sometimes 800 years old, offer their olives which are gathered only with hands so as to prevent deforming them. Right after that olives are placed at special strainer-like baskets with special care so that they remain fresh. From the moment they are gathered and in no more than 8 hours, the olives are transferred to our traditional oil press.
One of the most significant stages in the production of our highly pure olive oil is that of the oil extraction which takes place in our oil press. Consequently, we are entirely responsible as well as careful to achieve the best possible result. At this stage olives are separated from olive leaves with the use of water. After that olives are placed in a special device in order to be cold-pressed. It is of crucial importance to cold press olives as only this way they maintain their beneficial attributes. However, there is one drawback in the above procedure which actually turns out to be a benefit after all. Productivity is dramatically reduced during cold-pressing as opposed to hot pressing which precipitates the quantity but ruins the quality of the final product, the oil. By cold pressing we produce our oil olive which is characterized by high concentration, intense scent, low acidity and high quality taste. Olives remain in the special device where they are cold pressed for almost 50 minutes. The first production samples are analyzed meticulously before they are stored.

Although sunlight is absolutely essential for olive production, it has proved to be detrimental to olive oil.Our highly pure olive oil Divinus is stored in special tanks designed in such a way that we ensure exact cold-heat conditions at a permanent temperature of 16ºC in the interior. As for the exterior, our tanks permanently remain at specially constructed rooms where temperature strictly ranges between 17ºC and 22ºC.
